Sometimes, though it is often fake, for example Kari makes a “brain” out of noodles and fake blood to make a head injury on a dummy look more accurate.
The only real gore often comes from pig carcasses which are exploded, dissolved in acid, etc.
In the Halloween special and “do mattresses break your fall” episode a very realistic medical dummy is used, it has layers of synthetic bone, muscle, fat and organs and is used to measure exactly how a fall would impact a body, it has no top layer of skin so all this muscle is visible and it may be upsetting for some to look at.
The only real gore often comes from pig carcasses which are exploded, dissolved in acid, etc.

Jamie and Adam are seen roughly handling a hagfish in an aquarium, it is not actively harmed but it probably stressed the eel out. They dropped the eel on a grate, but it was returned to its tank. They also dunk credit cards into the tank of an electric eel, which may have been bad for the eel.

They go fishing/spearfishing in the “shooting fish in a barrel” and “can you survive on a desert island with only duct tape” episodes.
In the “can you survive on a desert island with only duct tape” episode they catch a wild/feral Hawaiian chicken with a duct tape net, it is obviously scared and trying to get away. They then release it and use store bought chicken because they don’t want to have to kill the wild chicken and there could be parasites in the wild meat.
Pig carcasses are often used for gun/explosion/projectile tests though later they use ballistic gel analogues. The pig would have likely been killed anyways, but sent to another buyer as that’s how slaughter houses work. It often does feel like a waste of useable meat though.
Kari is a vegetarian and is required to eat either meat or live bugs for an experiment, she chooses the live bugs, this could be interpreted as how some people view bugs and insects as less sentient or deserving of rights than other animals but I don’t think this is what she is saying.
After unsuccessfully trying to catch a feral pigeon (illegal in San Fransisco, where this is filmed), a flock of domestic pigeons are put into a large cage and subjected to stress, banging on the walls, soft tan blades pushing them around, not having adequate landing space. Stress can kill birds.
